Soy Milk

2 cups (500 ml) dried soy beans
4 cups (1 l) cold water

Debitter beans (see introduction) and soak in water for 10 to 12 hours. Rinse beans and purée in blender, using 2 1/2 cups (675 ml) of hot water per cup (250 ml) of beans.

Cook bean purée for 15 to 20 minutes on low heat. Strain through a sieve covered with cheese cloth and put on a big pot.

When no liquid is left in the sieve, remove it from the pot. Refrigerate soy milk. It keeps for up to five days.
