Apple-Avocado Museli

A gourmet start to your day!

1 avocado
2 Tbsp (30 ml) lemon juice
1/4 cup (63 ml) clover honey
1/4 cup (63 ml) non-instant rolled oats
4 sour apples
1/4 cup (63 ml) raisins
2/3 cup (167 ml) natural yogurt
1/2 cup (125 ml) whipping cream

Scoop the avocado flesh from its peel. Purée it thoroughly with the lemon juice and honey. Lightly dry roast the rolled oats. Wash and core the apples, grate medium fine. Mix the apple, cooled rolled oats, raisins and yogurt with the avocado mixture. Whip the cream until stiff and fold it in carefully

Variation: Add nuts and seeds to this dish for extra texture, protein and healthy fats. Try hazelnuts, almonds, walnuts, flax seeds and sunflower seeds. Dried cranberries add a colorful touch.
