Cardamom-Cashew Blobs

Spicy, unique flavor in a flash.

1 cup (250 mL) lightly toasted cashew pieces
cardamom seeds from two to four pods or 1/8 to 1/4 tsp (0.5-1 mL) powdered
1 cup (250 mL) finely chopped dates
finely grated peel of one organic orange
1/2 cup dried coconut, toasted and then powdered in blender

Chop cashews fairly fine (the blender chops them too fine). Remove cardamom from pods and grind with a mortar and pestle or between two spoons. Combine cashews and cardamom in a bowl with dates and orange peel. Knead mixture with fingertips until uniform, then roll in one inch (2.5 cm) balls and coat with coconut. Makes 18.
