Rich in vitamins, minerals and fibre, the tangy endive is said to be medicinal for the heart as well as the liver. In a bowl, whisk flax seed oil, lemon juice, yeast, mustard, soy sauce, honey (if desired) and kefir (or cream). Season to taste with vegetable salt. Add onions. Wash lettuce thoroughly and pat dry then cut or tear in small pieces and place in a bowl. Thoroughly toss salad with dressing. Serve immediately. Serves four. Source: alive Magazine (pre-2000)
