Endive Salad

Rich in vitamins, minerals and fibre, the tangy endive is said to be medicinal for the heart as well as the liver.

1 large head endive lettuce
2 Tbsp (30 ml) red or white onion, finely diced
4 Tbsp (60 ml) flax seed oil
Juice of 1 lemon
1/2 Tbsp (7 ml) nutritional yeast
1/4 tsp (1 ml) mustard
1/4 tsp (1 ml) soy sauce
1/4 tsp (1 ml) honey (optional)
1 Tbsp (15 m) kefir or heavy cream
1/4 tsp (1 ml) vegetable salt, such as Herbamare

In a bowl, whisk flax seed oil, lemon juice, yeast, mustard, soy sauce, honey (if desired) and kefir (or cream). Season to taste with vegetable salt. Add onions. Wash lettuce thoroughly and pat dry then cut or tear in small pieces and place in a bowl. Thoroughly toss salad with dressing. Serve immediately. Serves four.
