Tomato-Herb Salad

This amazing yet simple salad is a tasty way to cool you down on a hot summer day.

4 tomatoes, cut in chunks
3 Tbsp (45 ml) fresh herbs of your choice (oregano, basil, chives, rosemary for example), chopped
1/4 cup (60 ml) feta cheese, crumbled (optional)
2 Tbsp (30 ml) lemon juice
1/4 cup (60 ml) extra-virgin olive oil
Sea salt and fresh ground pepper, to taste

In a bowl, whisk together lemon juice and oil. Toss in tomatoes, herbs and feta cheese (if desired). Season to taste.
