Budwig Muesli-II

This is a classic. Dr Budwig introduced this particular recipe in her famous oil-protein diet to combat cancer. It is popular all over Europe because it tastes so good, consists of mostly raw ingredients and is easily prepared. Serves two.

1 cup (250 ml) quark or kefir cheese (or cottage cheese blended until creamy)
1/2 cup (125 ml) buttermilk or kefir
1 Tbsp (15 ml) honey
2 Tbsp (30 ml) flax seed oil
2 Tbsp (30 ml) flax seeds, freshly ground
1 apple, grated
1 Tbsp (15 ml) hazelnuts or walnuts, finely grated

In a large bowl, blend quark, buttermilk, honey and flax seed oil with a fork until creamy. Spread a layer of ground flax in two bowls and cover with apple and nuts. Top with the quark-oil blend and serve.
