Simply Delicious Spinach Spread

This spread is easy and delicious–a hit with adults and children alike. Spread it liberally on your favourite whole grain bread and enjoy!

1 lb (500 g) spinach leaves
2 cloves garlic, minced
1 onion, chopped
2 Tbsp (30 ml) cold-pressed olive oil
2 Tbsp (30 ml) flax oil
1 1/2 cups (375 ml) kefir (or sour cream)
Pinch nutmeg
Sea salt and freshly ground pepper to taste

Blanch the spinach in boiling water for two minutes. Sauté garlic, onion and well-drained spinach in the olive oil for three minutes on low heat. Put sautéed mixture and the rest of the ingredients into a blender and mix on pulse setting for a chunky spread.
