This spread is easy and delicious–a hit with adults and children alike. Spread it liberally on your favourite whole grain bread and enjoy! 1 lb (500 g) spinach leaves Blanch the spinach in boiling water for two minutes. Sauté garlic, onion and well-drained spinach in the olive oil for three minutes on low heat. Put sautéed mixture and the rest of the ingredients into a blender and mix on pulse setting for a chunky spread. Source: alive #235, May 2002
