Good Grains Pancakes or Waffles
Once you have your whole grain homemade mix on hand (see accompanying recipe), it is easy to whip up these wholesome pancakes or waffles. What a delicious way to start the morning!
1 1/4 cups (310 ml) soy milk or whole milk
2 free-range eggs
2 Tbsp (60 ml) extra-virgin olive oil
1 batch (about 1 2/3 cups) Good Grains
Pancake or Waffle Mix (see next page)
In a large bowl, whisk together milk, egg and oil.
Whisk in Good Grains mix until dry ingredients are just moistened. Batter should be slightly lumpy; do not overmix.
For pancakes: Use 1/4 cup (60 ml) batter per pancake. Cook pancakes on hot griddle until bubbles on top burst.
Turn and cook other side until lightly browned.
For waffles: Cook according to manufacturer’s directions for your waffle iron. Makes 12.
