Flaxen French Toast

Once you’ve made this recipe, you’ll be addicted to healthy French toast.
Using flax instead of the traditional eggs provides cancer-fighting fibre and plenty of powerful phytochemicals. The grains in the bread and the nutritional yeast provide minerals and the B vitamins important for reducing stress and soothing the nervous system.

1/2 cup (125 ml) flax seeds, finely ground (flax meal)
3/4 cup (185 ml) water
2 Tbsp (30 ml) oat flour
2 Tbsp (30 ml) nutritional yeast
1/4-1/2 cup (60-125 ml) soy milk
1 tsp (5 ml) ground cinnamon
2 Tbsp (30 ml) maple syrup
Thickly sliced whole grain bread

Blend the flax meal and water together until the mix looks like a thick milkshake. In a separate bowl, combine oat flour, nutritional yeast and a little soy milk to make a paste. Add the flax mix, cinnamon, maple syrup and remaining soy milk. Using a whisk, mix the ingredients into a batter. It should have a flexible, egg-like consistency (try not to add too much soy milk). Heat a lightly oiled cast iron skillet or frying pan. Dip the bread in the batter and cook each side until brown. Check after two to three minutes. Add more oil if needed. Sprinkle with cinnamon and serve with warm maple syrup and fresh fruit. Serves four.
