Beets Tahini Sauce

Pour this vegetable sauce over steamed vegetables for a beautiful combination of colour and flavour. It tastes delicious served in the hollow of an avocado half, arranged on a plate of salad greens. Makes 1 cup (250 ml).

1/2 cup (125 ml) raw tahini
1/4 cup (50 ml) grated beets
1/4 to 1/2 cup (50 to 125 ml) fresh lemon juice
1/4 to 1/2 cup (50 to 125 ml) water
1 celery stalk
1/4 cup (50 ml) fresh parsley

Blend together until smooth and serve.
