Cardamom Seasonal Fruit Compote

This is a delicious way to add more fruit servings to your day. Frozen fruit, such as peaches can bring a taste of summer. Alternatively, use seasonal fruits and experiment with adding dried fruits, too.

3 cups (750 mL) sliced fruits (pears, apples, frozen peach slices)
2 Tbsp (30 mL) water
1/2 cup (125 mL) honey (to taste)
1/4 tsp (1 mL) ground cardamom

Add water to a large pot on medium-high heat and stir in honey and cardamom. Add fruit and heat until steaming. Reduce heat to low and simmer for 15 minutes.

Serve hot with cereal or eat on its own. Keeps well in the refrigerator for 3 to 5 days. Serves 4.
