Pineapple and Mango Rooibos Bliss

We often forget that the benefits of beta carotenes aren’t just in carrots, but are found in many orange and yellow fruits as well. Take mango and pineapple, for example, which are high in vitamin C, bioflavonoids, beta carotene, and minerals. Pineapple also contains bromelain, which is a natural anti-inflammatory beneficial for digestion. Using the naturally sweet Rooibos tea in the smoothie adds antioxidants and also helps with digestion and skin conditions. Look for guava juice in a natural foods store.

1 cup (250 mL) fresh pineapple
1/2 cup (125 mL) fresh mango (or papaya)
1/2 cup (125 mL) Rooibos tea brewed, chilled
1/4 cup (60 mL) guava juice
1 Tbsp (15 mL) lime juice
1/2 cup (125 mL) Rooibos ice cubes

Starting with the fruits, place everything in a blender. Pulse to chop the fruit and then blend until smooth. Serve immediately and garnish with mint or fruit pieces. Serves 2.
