Croque Monsieur
by author Fred Edrissi

Let them eat sandwiches!

Help the kids make their own fancy grilled cheese sandwiches. They’ll gain a sense of accomplishment and have fun in the process.

12 slices whole wheat or raisin bread
12 slices Swiss Emmenthal cheese
3 free-range eggs, beaten
2 Tbsp (30 ml) whole milk or cream (optional)
1/4 cup (60 ml) butter
Ground cinnamon and natural sugar or
maple syrup (optional)

Butter the bread then place one slice of cheese between two bread slices. Cut in half diagonally. In a small bowl, beat eggs and milk. Dip sandwiches in egg wash then panfry gently in butter. Sprinkle with cinnamon and sugar or drizzle with maple syrup, if desired. Makes 12.
