Chilled Ginger Rooibos Delight

This delightful drink can be pre-prepared in batches and stored in the freezer or fridge. Add a dash of sparkling water for a refreshing pre-dinner drink, or serve it hot in winter.

3 cups (750 mL) rooibos green tea, brewed hot
2 to 3 inches (5 to 8 cm) fresh ginger,    bruised and sliced
1/4 cup (60 mL) honey or    natural cane sugar, to taste
3 Tbsp (45 mL) lemon juice
Fresh mint

Add the ginger to the hot rooibos and allow to steep for 5 minutes. Remove the ginger or pour the drink through a sieve and sweeten to taste. Chill, add lemon juice, and serve in tall glasses with fresh mint for garnish.

Serves 2.
