Apple Red Cabbage Slaw

Ginger gives this slaw its kick, so for maximum flavour find a young ginger with a pale skin.

3 Tbsp (45 mL) fresh lime juice
1 tsp (5 mL) Dijon mustard
2 tsp (10 mL) sugar
2 tsp (10 mL) ginger, freshly grated
6 Tbsp (90 mL) extra-virgin olive oil
5 cups (1.25 L) red cabbage, grated
1 1/2 cups (350 mL) tart apple (such as Granny Smith), sliced
3/4 cup (180 mL) green onion, chopped
Salt and pepper

Whisk lime juice, mustard, sugar, and ginger together. Slowly add olive oil while whisking. Pour dressing over cabbage, apple, and green onion. Season with salt and pepper to taste and chill until ready to serve. Slaw can be prepared up to 4 hours in advance.

Makes about 6 cups (1.5 L).
