Roasted Sweet Potatoes and Cranberries

Makes four 1 cup (250 mL) servings

This side dish goes great with a turkey dinner.

2 lb (1 kg) 1 in/2.5 cm cubed sweet potatoes, peel on
2 cups (500 mL) fresh or frozen cranberries
1 cup (250 mL) orange juice
1/4 cup (60 mL) maple syrup

  1. Preheat oven to 450 F (230 C).
  2. Line a 9 x 13 in (3.5 L) metal pan with wet parchment paper. Add sweet potatoes and cranberries.
  3. Pour the orange juice over top. Drizzle with maple syrup.
  4. Roast for 40 to 45 minutes or until sweet potatoes are soft.

Each 1 cup (250 mL) serving contains: 150 calories, 0 g total fat, 0 g sat fat, 0 g trans fat, 65 mg sodium, 36 g chol., 5 g fibre, 2 g protein
