May is nearly here, and do you know what that means? Cinco de Mayo is just around the corner.

The Mexican holiday Cinco de Mayo—or May 5th in English—commemorates the 1862 victory of the Mexican army over the French during the Franco-Mexican war. Although it’s a minor holiday in Mexico, Cinco de Mayo has become quite the celebration in the North America, complete with festivals, parades, and delicious Mexican feasts.

You too can celebrate Cinco de Mayo this Saturday with a Mexican-inspired feast—and a meatless one at that. This Cinco de Mayo scrap the typical ground beef and instead make this selection of healthy, vegetarian dishes.
