This is a really simple appetizer that I often make to eat while I am cooking our proper dinner! It is light and fresh but with strong spices which I love.
I use whichever organic crackers are in the pantry - the best are the firm ones. I scatter one layer of them on a baking tray. Then I preheat the oven to about 350 degrees.
I chop up 1 organic tomato, some cilantro, 1 onion and a wee little jalepeno pepper. I mix the ingredients together in a bowl, drain out any excess liquids, add some salt to taste, and voila - I have my fresh, homemade salsa.
NOTE: if you have NO time, just buy a jar of organic spicy salsa - there are lots to choose from.
I scatter the salsa on the crackers and then add slather some shredded cheese on top. I use a spicy cheddar mix that I buy pre-shredded.
Then its into the oven for about 5 minutes - until the cheese melts. Then, I feast!
This is a simple and easy appie that I serve to family and friends before dinner and it's also a great treat for the chef! :D |
