Last week we talked about Meatless Mondays, an Earthsave Canada initiative encouraging individuals and families to eat meat-free every Monday.  

For those of you haven’t heard about Meatless Mondays, we suggest getting out from under that rock. Everyone from Oprah Winfrey to Al Gore are supporters of the American version of Meatless Mondays, and the campaign is taking flight in Canada too, backed by respected environmental organizations such as the David Suzuki Foundation and World Wildlife Fund.

Get involved by taking the pledge, or if you’re not quite convinced, try out the following meat-free dinner and see what you’re not missing out on.

Salad‘Tis the season for those sweet, juicy, easy-to-peel Chinese oranges! Use fresh mandarin oranges rather than the canned variety in this tangy Mandarin Orange and Gorgonzola Salad.

EntréeThis soba noodle dish with sautéed veggies, seared tofu, and a creamy almond butter sauce could be considered the “gateway” dish to tofu it’s so addictive!

DessertYes, most desserts are already vegetarian, but these Carrot Zucchini Squares take it one step further by being completely vegan-friendly—meaning free from any animal products, including dairy, eggs, and even honey.
