Chilled Cantaloupe Soup

    An unusual combination of ingredients. This soup can be served as an appetizer, on its own, or for dessert.

    1 large cantaloupe
    2 cups (500 mL) fresh orange juice
    1 Tbsp (15 mL) fresh lime juice
    1/4 tsp (1 mL) ground cinnamon
    Zest of 1 lime
    Wash and dry cantaloupe, then peel, seed, and cut into chunks. Place cantaloupe and 1/2 cup (125 mL) orange juice in blender or food processor; process until smooth.

    Transfer to large bowl. Stir in lime juice, cinnamon, and remaining orange juice. Cover and refrigerate for at least 1 hour or until ready to serve.

    Serve cold in chilled bowls and garnish with lime zest, if desired.

    Serves 4.

    Each serving contains: 130 calories; 3 g protein; 1 g total fat (0 g sat. fat, 0 g trans fat); 33 g carbohydrates; 3 g fibre; 34 mg sodium
