Tangy Tofu Spread

    This is an excellent vegetarian substitute for cheese spreads. Prep Time: 10 Minutes

    2 cups (500 mL) firm tofu (approx 1 lb/500 g), rinsed
    1/2 cup (125 mL) lemon juice
    1/2 cup (125 mL) nutritional yeast
    1/2 cup (125 mL) tahini
    1/4 cup (60 mL) tamari sauce
    1/4 cup (60 mL) chopped fresh basil
    2 cloves garlic, minced
    1 pkg (10 oz/300 g) fresh spinach washed, steamed, and well drained

    In food processor fitted with metal blade, process tofu, lemon juice, yeast, tahini, tamari, basil, and spinach until smooth.
