Mild Moroccan Spiced Dressing

    1/4 cup (60 mL) fresh lemon juice
    2 Tbsp (30 mL) natural soy or organic yogourt
    1 1/2 tsp (7 mL) honey
    1/4 tsp (1 mL) sea salt (to taste)
    1/4 tsp (1 mL) ground cumin
    1/4 tsp (1 mL) turmeric
    1/4 tsp (1 mL) cinnamon
    1/4 tsp (1 mL) ground ginger
    1/4 cup (60 mL) flaxseed or extra-virgin olive oil

    These ingredients provide so much more nutrition than a commercial dressing. Cumin, ginger, and cinnamon have a multitude of healing properties, including aiding digestion and helping to reduce blood pressure.

    Whisk together lemon juice, yogourt, honey, and spices. Slowly whisk in oil to a smooth, creamy consistency. The dressing will develop a rich yellow colour over time, adding beautiful rich tones to grains and vegetables.

    Makes 2/3 cup (160 mL)
