Honey Lime Halibut Taco Filling

    Zest of 2 limes
    Juice of 2 limes
    2 Tbsp (30 mL) honey
    1 Tbsp (15 mL) extra-virgin olive oil
    1/2 tsp (2 mL) sea salt
    1/2 tsp (2 mL) garlic powder
    1/4 tsp (1 mL) freshly ground black pepper
    1 lb (450 g) Pacific halibut

    Combine lime zest, lime juice, honey, olive oil, salt, garlic powder, and black pepper in large shallow container. Add fish, cover, and marinate in refrigerator anywhere from 1 to 2 hours, flipping fish at least once during this time.

    Set oven rack about 6 in (15 cm) from heating element and preheat broiler. Place fish on rimmed, greased baking sheet and cook for 5 minutes. Flip fish and broil for additional 5 minutes, or until opaque in centre.

    While fish is cooking, pour any leftover marinade into saucepan and bring to a boil over medium heat. Simmer for 5 minutes, or until slightly reduced.

    Chop cooked fish into 1/2 in (1.25 cm) dice and combine with reduced marinade in bowl.

    Serves 4.
