Meatless Monday: 5 Veggie Burger Recipes

Share

July 28 is Hamburger Day, so why not celebrate by grilling up some healthy, delicious veggie burgers?

What do you get when Hamburger Day meets Meatless Monday? Veggie burgers, of course!

Like sad salads, bad veggie burgers have quite the reputation among meat eaters and vegetarians alike. I’m talking about the mushy, crumbly, tasteless abominations that most of us have had the misfortune of trying at one time or another.

Well, I say enough is enough! Veggie burgers need not fall apart or feature an anonymous-looking mishmash of ingredients. That’s why we’re sharing some healthy burger recipes with good-for-you grains, seasonal veggies, and delectable sauces.

1. Stuffed Portobello Burgers with Caramelized Onions

If you want to forgo meat but crave the thick, juicy texture of a beef burger, portobello burgers are for you. These humble mushrooms make for a meaty meal when grilled, topped with caramelized onions and grilled veggies, and nestled between whole grain buns.

2. Asian Tofu Burgers with Chili Lime Pineapple

If you’ve never tried grilling fruit, what are you waiting for? Tossing watermelon or pineapple on the barbecue actually brings out the fruits’ natural sweetness, making them a mouth-watering addition to sandwiches, burgers, and ice cream.

This recipe also dispels the myth that meatless burgers can’t be flavourful. It features just the right blend of hot, Thai-inspired spices and sweet, sultry pineapple.

3. Lentil Goat Cheese Burgers with Spinach Pesto

If you’re looking for a unique burger with foodie flair, say hello to this baby. Lentils have an earthy taste that’s elevated by creamy goat cheese and zippy spinach pesto. These burgers can also be topped with veggies such as tomato, cucumber, or grilled zucchini, and finished with a sprinkle of microgreens for a healthy and pleasing presentation.

4. Quinoa Kale Burgers with Chipotle Yogurt Sauce

A good sauce can transform the taste of a burger, as is the case with this tangy yogurt topping. These superfood burgers also boast protein-packed quinoa and navy beans, as well as ever-popular kale.

5. Black Bean Rice Burgers with Guacamole

It’s hard to go wrong with avocado. Also bolstered by hearty black beans and whole grain rice, these burgers are full of healthy fats, fibre, and protein. Dig in!
