Cheese Sauce

1 cup milk (or soy milk or almond milk)
1/2 cup water
1 tbsp. flour
1 tbsp. soy sauce
2 oz. Swiss Gruyere cheese, grated
2 oz. Swiss Emmental cheese, grated
2 oz. Parmesan cheese
1/4 tsp. nutmeg, ground
pepper and salt for seasoning

In a saucepan, combine milk, water, flour and soy sauce. Bring to a boil, stirring to avoid forming lumps. Add grated cheese and simmer for 1 to 2 minutes. Season with nutmeg, pepper and salt.
