Delicious Nut Loaf

2 eggs
1 cup (250 ml) milk or soy milk
1 cup (250 ml) filberts or walnuts, finely grated
1 cup (250 ml) celery stalks, finely chopped or 1/2 cup (125 ml) celery root, finely grated
1 large onion, finely chopped
1 Tbsp (15 ml) butter
1 tsp (5 ml) sea salt
1/4 tsp (1 ml) poultry seasoning
1 1/2 cup (375 ml) bread crumbs
1/2 cup (125 ml) whole wheat or kamut flour
1 tsp (5 ml) baking powder
soy sauce to season

Fry chopped onions in butter until translucent. Set aside. Mix together eggs and milk. Add nuts, celery, cooled onions, bread crumbs and season with salt and poultry seasoning. Mix baking powder and flour and gradually add to dough while kneading it into a firm consistency. Add more flour as necessary. Season to taste by adding soy sauce if desired.

Place nut loaf in greased loaf pan and bake at 350°F (225°C) for 30 to 40 minutes. Loaf should have a nice crust.

This delicious nut loaf is a treat for a Valentine's dinner, served with mashed potatoes and a side salad of leafy greens. Leftovers should there be any! are delightful in a boxed lunch.
