This simple yet sensational dressing is based on the Mediterranean formula of olive oil and lemon juice. Using flax oil instead provides essential fatty acids and cancer-fighting potential. Since garlic has health benefits when both raw and cooked, this is a great way to get some raw garlic into your diet.

4 Tbsp (60 ml) high lignan flax seed oil
2 Tbsp (30 ml) nutritional yeast
2 Tbsp (30 ml) fresh lemon juice
2 garlic cloves, finely minced

In a salad dressing jar, mix all ingredients and shake well. Use on green salads, on grains or over steamed vegetables. Keeps refrigerated for two to three days.

Garlic contains compounds such as allyl sulphides that help ward off cancer-causing substances. It also fights bacteria and intestinal infections, and stimulates liver and gallbladder functions. Serves four.
