Gingered Asparagus

1/4 cup (188 mL) Omega Apple Cider Vinegar
1 1/4 Tbsp (23 mL) grated fresh ginger
2 Tbsp (30 mL) maple syrup
1 lb (450 g) fresh asparagus
2 cloves garlic, minced
3-4 Tbsp (45-60 mL) Omega Sesame Oil
1/4 tsp (2 mL) sea salt
1 tsp (5 mL) soy sauce

In a small saucepan combine vinegar, ginger and maple syrup and bring to a boil. Cook uncovered over medium heat 10 15 minutes. Set aside.

Cut off one half inch of lower stalk of asparagus. Bring a small saucepan of water to a boil. Add asparagus and cook until tender, five to eight minutes. Drain and rinse with cold water.

Combine garlic, oil, salt and soy sauce with vinegar mixture. Arrange asparagus on a plate. Pour vinegar mixture over top and marinade in the refrigerator for one to two hours before serving.
