4 large bananas
1 Tbsp (15 ml) flour
2 Tbsp (30 ml) sugar
1/2 tsp (2 ml) cinnamon
1 14-oz (454-ml) can coconut milk
Remove ends from bananas but do not peel. Place in a covered bamboo steamer over a pan of boiling water and cook 5 minutes. Using tongs and a knife, peel off banana skins.
In a saucepan, combine flour, sugar, and cinnamon. Gradually add coconut milk and stir until smooth. Cook over medium heat, stirring constantly, until mixture boils and thickens, then simmer 2 minutes longer. Drizzle over hot bananas and serve. Serves 4.
