Miso soup is the ultimate comfort food. Some people have even been able to wean themselves off coffee by drinking it regularly.

Miso soup is the ultimate comfort food. Some people have even been able to wean themselves off coffee by drinking it regularly. Maybe it's just a healthier way to keep your hands warm! Be sure to add the miso after removing the soup from heat.

5 cups (1.25 l) water
1/3 cup (80 ml) mushrooms, sliced
1/4 cup (60 ml) scallions or green onions, chopped
1/4 cup (60 ml) carrot, finely shredded, or greens such as kale, thinly sliced
1 Tbsp (15 ml) tamari sauce
1/4 cup (60 ml) white miso paste (any miso will work just as well)

Bring the water to a boil in a medium pot. Add mushrooms, scallions, carrot and tamari. Reduce heat to medium and simmer for 10 minutes until the vegetables soften. Reduce heat to low. Pour 1/4 cup (60 ml) of the hot soup into a small bowl and add the miso paste; blend well. Turn off the heat and add the miso mixture back into the soup. Taste, adjust seasonings and serve. Serves two.
