Orange and Julienne Carrot Salad

This makes two pretty, tasty, salad cups.

4 medium carrots, julienne
3 large oranges
1 tsp (5 mL) black sesame seeds
2 Tbsp (30 mL) flax seed oil
salt and pepper to taste
mint leaves for decoration (optional)

Cut the top of two oranges, remove the inside and squeeze into a mixing bowl. Make sure you don't damage the skin! Peel and cut the third orange into segments. Add carrots, oil and spices to orange juice and toss very well. Add orange segments and stuff orange cups with salad. Decorate with mint leaves. This makes two pretty, tasty, salad cups.
