Use your favourite method to grate the vegetables

Use your favourite method to grate the vegetables. Serve them in a mound placed on salad greens or sprouts. Have your favourite dressing on the side or toss with the salad before serving.

1 cup (250 mL) grated carrots
1 cup (250 mL) grated turnips
1 cup (250 mL) grated beets
1 cup (250 mL) chopped cabbage
1 cup (250 mL) fresh corn kernels
Juice of 1 lemon
Dash favourite seasoning (optional)

In a medium-sized serving bowl, combine the carrots, turnips, beets, cabbage, and corn. Pour the lemon juice and seasoning on top; toss. Serves 4.
