Serve it as a midday refresher, a dinner party mocktail, or even a palate cleanser between scoops.

    Fennel Honey Soda

      Ingredients

      • 1/2 cup (125 mL) chopped fennel stems and fronds (more fronds to garnish, optional)
      • 1/2 cup (125 mL) water
      • 1/4 cup (60 mL) honey
      • 4 cups (1 L) soda water

      Directions

      In small saucepan, combine chopped fennel stems and fronds, water, and honey. On medium heat, allow to simmer for 10 minutes. Remove from heat and set aside until cool, about 10 minutes. Strain and reserve.

      Fill 4 glasses with crushed ice. To each glass add 1 1/2 Tbsp (22 mL) fennel honey syrup and fill with soda. Lightly stir and garnish with fennel fronds, if using,
