    This is a delicious, nutrient-rich meal that doesn’t even require venturing out of the bulk and produce sections of the supermarket.

    1 cup (250 mL) cooked quinoa (found dried in the bulk aisle)
    1/4 cup (60  mL) dried cranberries
    1/4 cup (60 mL) toasted almonds
    1/3 English  cucumber, peeled, seeded, and chopped
    1 Tbsp (15 mL) extra-virgin olive  oil
    Juice of 1/2 lemon

    Mix cooked quinoa with cranberries, almonds, and cucumber. Toss with olive oil and lemon juice.
