Minty Watermelon and Cucumber Refresher

    Two summer favourites, sweet watermelon and cool cucumber combine to create this tasty thirst-quencher.

    1 cup (250 mL) seeded and cubed watermelon
    1 English cucumber, thinly sliced
    1/2 cup (125 mL) fresh peppermint leaves
    8 cups (2 L) water

    Place watermelon cubes, cucumber slices, and mint leaves in large pitcher or bowl. Pour water over top. Chill in refrigerator for a minimum of 1 hour.

    Serves 4.
