    Miso Soup With Greens

    Ingredients

    • 2 cups low-sodium vegetable stock
    • 1/2 sheet nori seaweed, cut into squares
    • 1/2 cup chopped kale
    • 1/4 cup chopped green onion
    • 1/2 cup diced firm tofu
    • 1/2 to 1 tsp miso

    Directions

    In small saucepan, heat vegetable stock, nori, kale, green onion and tofu until hot.

    Remove from heat and let sit for 1 to 2 minutes.

    Place miso paste in separate bowl and add 1/2 cup hot stock, stirring to combine. Add this miso paste to saucepan with the rest of the stock and stir.

    Serve in mugs or bowls.
