Raw Buckwheat Breakfast

    Share

Buckwheat groats are available from health food stores and have a distinct flavour. For a milder taste, substitute oat groats or steel-cut oats. Whole grains provide essential amino acids and B vitamins to help with stress. The dates provide plenty of sweetness along with fibre and minerals.

    8 dates
    1 cup (250 mL) buckwheat
1 cup (250 mL) apple or pear juice
    1 apple, coarsely diced
2 Tbsp (30 mL) shredded coconut
    Cinnamon and nutmeg to taste

In a large bowl, cover buckwheat groats and dates with water and soak overnight at room temperature. Drain buckwheat and dates, reserving 1 cup (250 mL) of liquid. Blend reserved liquid, buckwheat, and dates together with apple juice and apple. Top with coconut, cinnamon, and nutmeg. Add other dried fruits, nuts and seeds to taste.

    Greek Turkey Burger Bites

Ever thought about making burgers as an appetizer or as a potluck meal for friends and family? Try making your favourite burger into bite-sized portions. They might be small in size, but they won’t be small in flavour. These burgers also pair well with a Greek salad for a delicious mid-week lunch or dinner. Fresh is best Squeeze fresh lemon on patties while cooking to give them the fresh zing of citrus.
