1. Soba Noodles with Almond Sauce and Pan-Seared Tofu

Here’s a dish that will warm you from the inside out. Plus, it packs wonderfully for lunch the next day. Soba noodles are made from gluten-free buckwheat, and can be readily found at health food stores.

2. Lentil and Potato Soup

This soup is a Middle Eastern classic that hits the spot after a blustery day! All the ingredients are super easy to find—you may have them all in your pantry already. To quicken the prep time, opt for canned lentils rather than dried lentils.

3. Escarole White Bean Soup with Turkey Meatballs

No escarole? No problem! Swap in any other wintery leafy greens—kale, collard greens, or mustard greens all work. And these turkey meatballs will soon become a go-to favourite recipe for pastas too.

4. Vegetarian Chili with Jewel Yams

Who doesn’t love chili? This version will prove that you don’t need the meat to make it delicious! Throw in any veggies or kinds of beans that you have lying around. Anything from chickpeas to red pepper or zucchini works!
