How popular is West? It was recently voted one of the top 10 restaurants in the world by the UK’s Sunday Independent. Hawksworth was voted the 2004 Chef of the Year by Vancouver Magazine, and West has won accolades of every stripe–most of them distinctly golden. An offering of recipes from West’s kitchen is enough to brighten the blandest February table.

Hawksworth spent close to a decade under some of the toughest task-masters in Europe before returning to Canada to find the culinary scene in the midst of a fresh-minded evolution. He has been at the forefront of that movement ever since.
