    Chia pudding thickens best when chilled overnight, but if you’re short on time, stir once halfway through the chill so the seeds don’t clump together.

    Spiced Pear and Chia Pudding Parfaits

      Ingredients

      • 2 ripe pears, diced
      • 1 1/2 Tbsp (22 mL) maple syrup
      • 1 tsp (5 mL) ground cinnamon
      • 1/4 tsp (1 mL) ground nutmeg
      • 1/2 cup (125 mL) chia seeds
      • 2 cups (500 mL) coconut milk, or milk of choice
      • 1 tsp (5 mL) vanilla bean paste
      • 1/2 cup (125 mL) low-sugar maple or regular granola

      Directions

      In small saucepan, simmer pears with maple syrup, cinnamon, and nutmeg over medium-low heat until softened and fragrant, about 8 to 10 minutes. Remove from heat and cool slightly.

      In medium jar or bowl, whisk together chia seeds, coconut milk, and vanilla paste. Cover and refrigerate for at least 2 hours, ideally overnight.

      When ready to serve, layer chia pudding, spiced pears, and granola into jars or glasses.

      Serve chilled or at room temperature.
