    Citrus mate fizz

    This non-alcoholic drink is bitter-sweet, citrusy, bubbly, and easy on the stomach. It can also be made with rooibos tea instead of yerba maté, and orange juice in place of grapefruit.

    Citrus Maté Fizz

      Ingredients

      • 2 Tbsp (30 mL) loose leaf yerba maté
      • 3 Tbsp (45 mL) granulated sugar
      • 1/3 cup (80 mL) sliced fresh mint
      • 1 Tbsp (15 mL) sliced gingerroot
      • 1 grapefruit
      • Club soda

      Directions

      In heat-proof bowl, place yerba maté, sugar, mint, and ginger. Add 3 cups (750 mL) steamed water and stir to dissolve sugar. Let mixture steep for 1 hour or more. Strain mixture to remove solids. Squeeze juice of grapefruit into maté mixture. Chill mixture for 2 hours or more.

      For individual drinks, place a couple of ice cubes in glass and fill halfway with maté mixture. Fill rest of glass with club soda.
