For many parents, back-to-school time can be a little stressful with all the changes to a child’s routine: earlier bedtimes, a more rushed morning routine, after-school activities, and homework. Then there’s the added responsibility of making school lunches that are healthy, nut free, and—most importantly—delicious! You know it’s a success when your child brings home an empty lunchbox, because they’ve eaten every last bite (not because they’ve traded it with someone else)! I’ve created a week’s worth of yummy and wholesome lunchbox ideas that are easy to prep and won’t break the bank. The recipes that require a little more prep can easily be made ahead of time, say on a Sunday afternoon when you can do it together. Making recipes with your kids is a great way to get them interested in healthy eating. It’s also a wonderful time for you, as a parent, to connect with your children and have some fun while you’re at it!
